Chocolate Ice-Cream

Today we tried a sweet treat- sweet potato ice cream and.... it’s a hit!


INGREDIENTS:

-2 sweet potato's baked (the orange kind)

-1/4 cup coconut milk

-2 Tbsp cocoa powder

(cinnamon)


METHOD:

Bake 2 sweet potatoes, when cool cut into cubes and freeze. (If you have a good blender you can leave on the skin for more fibre. Otherwise peel.)

Blend frozen sweet potatoes + 2 tbsp cocoa powder + 1/4 cup coconut milk and a sprinkle of cinnamon if you like.


That’s it! Compared to the usual frozen banana ice cream it’s lower in sugar and is much more filling.
