Bonnie's Easy, Delicious Shrimp Salad with Vegan Kimchi

Need a speedy but ultra-delicious lunch ready in 10 mins? Our wellness coach (@bonnie_tnc_wellnesscoach) shares how she builds her flavour packed lunch bowls filled with leafy vegetables, proteins, gut-loving probiotics as well as good fats.





You'll love the tang from the vegan kimchi, juicy cherry tomatoes, and flavourful tom yum shrimp paired with the rich nutty flavor from the avocado. This recipe's one to keep!


Remember salad leaves can be hard to digest if you have gut issues... if that's the case for you, you might want to swop this out for a base of roasted veggies.


Ready in 10 mins

Serves 1

  1. Start with a base of leafy greens (I add sorrel leaves for a nice lemony bite - it goes well with seafood), cherry tomatoes, and a quarter of an avocado.

  2. I add some gut-loving vegan kimchi from Gaga's Organic Power Kraut. Brings this salad to another level!

  3. You can't skip this one. Add Protein! I'll be having mine with shrimp.

  4. To the cooked shrimp, mix a tsp of Vegan Organic Tom Yum Paste from Mekhala. Completely optional, but absolutely delicious. Enjoy!
