3 ways to marinate chicken
In need of a quick dinner- chicken breasts do not have to be boring. We like to marinate chicken breasts in the morning, but if you’re pushed for time 30 minutes to an hour before you cook will also do the trick. We usually buy fresh chicken breasts and then marinate them in zip lock bags for ½ day and then freeze them so they are ready to go when we are pressed for time.
Here are some of our favourite marinades:
- Lemon + Ginger: Juice of 2 lemons, pepper and grated ginger
- Thai curry: ½ cup coconut milk, 1 Tbsp red curry paste, juice of 1 lime, splash of fish sauce
- Coriander chilli: Juice of 2 lemons, fresh coriander finely chopped, garlic finely chopped, 1 Tbsp gluten free tamari/ soy sauce, fresh chilli slices to taste
